Cumin from the meadow, burnets and sweet clover, the Lozère sheep does not deprive itself of anything, of no flower, of any aroma, which might enrich and scent its milk when its lamb is bleating at the end of the meadow, with a hunger to satisfy.
Raised by the mother, the Lamb from Causses, Cévennes or Margeride, therefore revels in the delights of the food chain such as have existed since the dawn of time.
This tenderness and specific scent to be found in each area can be found throughout the Limousine, from its suckling calf to Salers, Bresse Chicken from Mieral, Dombes duckling, Challand duck, and the white "Cros de la Géline" Gauloise (half-wild chicken from the Montagne Noire in the Tarn)... selected on site by the eye and under the auspices of the master by Hugo Desnoyer.
If you do not live in the Elysée Palace, and do not regularly have lunch at Pierre Gagnaire or the Astrance, you should know that the butcher’s shop is open to all unknown lovers of food and is located at 45, Rue Boulard in the 14th Arrondissement in Paris.
