“We know the artisan at work.”

Jean de La Fontaine

Formerly, the meaning of the word "artisan" was similar to that of "artist"; and this is only fair since their craft is about art, talent and the mastery of a number of secrets...

To paraphrase a famous French writer of fables, it could be said that "It is in our palace that we recognise the prince who serves us!"

The artisan has the gift for this and while it may appear natural, it is very much the result of a painstakingly long apprenticeship and a relentless pursuit of excellence.

New values highlights the often unobtrusive artisans who do not skimp on quality nor balk at the task, since their aim is perfection.

Shame on those who have criticised this immense and irreversible movement towards the respect of nature and of your health, disgrace on the lobbying companions working for the powerful interests of those who pollute our planet! Of course, there are some cases of abuse, but these are not perpetrated by those who, to the detriment of making a quick profit, are prepared to take all risks in the name of the idea they have conceived of their profession and of themselves.

Cumin from the meadow, burnets and sweet clover, the Lozère sheep does not deprive itself of anything, of no flower, of any aroma, which might enrich and scent its milk when its lamb is bleating at the end of the meadow, with a hunger to satisfy.

Raised by the mother, the Lamb from Causses, Cévennes or Margeride, therefore revels in the delights of the food chain such as have existed since the dawn of time.

Well no, all flours are not the same! To choose the best, you have to have the keen eye of a master who can tell when stood in front of a field of wheat after harvest, if that which is in front of you will be good enough for the quality of the bread. Eric Kayser spends a great deal of time selecting his suppliers and raw materials. As a former companion of the Tour de France, his noble standards have travelled the world over. Imperial, with a simple gesture, he can offer us the best bread of the season: rather surprising indeed!
