The A.O.C. Guarantee of Origin will soon have to change its name… A single letter will be enough, as the “C” is to become a “P”, as required by civil servants in Brussels following their declaration one fine day back in May 2009. “In May, do as you please!” goes the premonitory saying.
But, upon taking a closer look, the nuance is an interesting one as what was “controlled” before, will become mutatis mutandis, “protected”.

It is therefore a deep-rooted change in mentalities since, in the upper realms, people are no longer thinking of controlling those who want to “do things well”, but to protect them from the anarchic and bloodthirsty assault launched by those who want to “do things quickly”.  

The economy of unfair competition will henceforth be replaced by the noble notion of heritage! After animal reserves, it has finally been decided to create food reserves! On the whole, as it is better than nothing, because, outside of these islets of another world and another time, it seems difficult to prohibit those who thoroughly enjoy the single taste of profit.
