What a wonderful change !
While wine is no longer consumed in the same manner it once was and quality now happily rules over quantity, it is also true that it is now often produced in a manner which respects nature and traditional methods (or at least, the best that tradition has to offer).
Spurred on by a demanding generation of winemakers, new harvesting and winemaking methods have come to the fore. For instance, these methods involve the sparing use of sulphites, respect for natural cycles in line with the excellent “Biodynamics” philosophy, manual harvests, the re-emergence of long forgotten grape varieties and reducing filtering to a minimum, since it spoils the real taste of the wine.
In restaurants indicated by the Nouvelle Cave symbol, you can sample these wines, chosen with great attention to detail and often passion by enlightened sommeliers.
